Greek Recipe:
Lamb Souvlaki Skewers '
Total time: 15 Minutes
Preperation time: Few Minutes
Marinate time: 3 hours
Cooking time: 10 minutes
Very easy
chefs' Note:
-Serve in pito bread with slices of tomato & onion
- The best side sauce is unquestionably
tzatziki.
Ingrediants:
750gm. ( 1 lb. ) boneless lamb or shoulder , cut into 4 cm. ( 1 and a half cubes)
3 tablespoons olive oil
3 tblespoons white wine
1 clove garlic - crushed
1 fresh branch rosemary
1 teaspoon salt
a pinch of oregano
ground pepper to taste
Method;
Combine spices, wine and oil, brush on cubes of meat on all surfaces with mixture
Marinate : 3 hours
Assemble the skewers' : grill 5 minutes, turn once and cook another 5 minutes.
Tzatziki sauce
Preparation time: 15 minute s & 2 hours refrigeration
Cooking time: 20 minutes
Serves 6
Ingrediants:
Chilled yoghurt dip - highly flavored with garlic
3 large cucumbers,-coarsely grated
500 g. thick natural yogburt
3 cloves garlic, - crushed
1 teaspoon, - finely chopped fresh dill
1 tablespoon olive oil
salt and freshly ground pepper,- to taste
2 pitta breads
2 tablspoons olive oil,- extra
1. Line a fine strainer with cheesecloth. Spoon cucumber into strainer, cover with cloth to enclose.
2. Press and squeeze firmly to remove the moisture from the cucumber. Place cucumber into mixing bowl.
3. Add Yogurt, garlic,dill and oil: mix well. Season to tast. Cover with plastic wrap: refrigerate: 2 hours or overnight.
4. Preheat oven ; to moderate 180*C.
Cut through centre of pitta breads with sharo knife.
Brush rough side with oil. cut each round into 8 wedges.
Bake bread on ungreased tray 20 minutes or until crisp.
Serve cool with chilled Tzatziki

- Legumes are that group of beans, peas & lentils that are high in fiber and combate heart disease. The Cretan ( and Greek ) diet is filled with fabulos dishes using many vaietis of legumes.
- Keep it Natural- use freshingrediants and doing the least possible to it. Sticking with foods that are recognizable in their originalform is the key.
-Greeks also use fish & Meats in small quantities and less frequently. We also incorporate grlic and onions as well.
